Cook noodles per instructions. If using fresh egg noodles, boil (add a tsp. of oil and some salt to the water) for just a minute and rinse with cold water and drain in a colander.
Heat oil, (long sliced) onion. Fry for a couple of minutes. Add ginger and garlic and fry for another minute. Optionally, add other spices (garam masala, jeera, dania, etc., depending on how Indian you want to make this.)
Add chopped vegatables and salt, mix well, and cook for 4-5 minutes, continuously stirring.
Towards the end, add soy sauce and tofu, mix and stir for a minute.
